But back to my favorite topics ...

as every month I suggest a visit among the market stalls, always loosely based on my usual site of trust .....


Physalis or chichingero
It 's a poorly preserved fruit. It is eaten fresh, straight from the protective glass. You can dry in a moderate oven and store in closed containers and dark.

Oranges
If the pulp is dry, it means that have been kept for too long, whether it is acid means the ripening of the fruit did not occur naturally. In a cool, remain one week.

Avocado
to buy not yet fully mature, to let it at room temperature. It is eaten when it is soft but not soft.

Cachi
If you buy the unripe fruit, place them on a tray and store in a dry place without light up at the right ripeness. If you buy them ripe, put them in the least cold of the refrigerator for up to 3 days.


Chestnuts Chestnuts can be kept in a cool, dry place for a couple of months. If the first cooked and peeled, you can also freeze. In this way they last 6 months.


Kiwi
If purchased green, leave it in the refrigerator in a closed bag, preferably with another fruit. When it is too ripe, it tastes bad.

mandarin oranges or clementines
born from a cross between the mandarin and orange. The flavor is sweet and the flesh is seedless. Purchase must be intact and firm, not soft.

Pere
If mature (the pulp is soft under a light finger pressure) are kept in the refrigerator for a week. If unripe, should be left at room temperature.

Grapefruit
What this in our markets is mainly imported. It keeps well, so it is readily available throughout the year, also in pink variant


and then the vegetables ......

Broccoli
You can keep hanging upside down in a cool place or refrigerator for several days. Alternatively, you can freeze them cooked.

Artichoke
This vegetable, when cooked, it should be consumed within a short time, while crude can be stored in the refrigerator for 4 / 5 days.

thistle or cardoon
of this vegetable is eaten the stem, and fleshy flavor similar to artichokes. It is preserved in a refrigerator for a week in a plastic bag with small holes.


Cauliflower Cauliflower, very compact in the flesh, keeps well in refrigerator up to five days, without dark spots.

Chicory Cutting

Fennel

endive
more the color of the leaves is dark, it should be eaten first. Often, endive, if kept for too long, they become bitter.


Lettuce Brazilian (or iceberg), Roman, curly, cut, curly, kind, red cabbage: the varieties are many. It is kept in the refrigerator for no longer than two days, already cleaned, washed and dried.

sweet peppers

acquisition appear firm, without soft parts and lively color. Keep in the refrigerator for a few days, but not freeze it. Last month I saw a recipe on TV and I tried it soon after, take the peppers and open to foot, stuffed with olives, capers, and a filet of tomato, one anchovy, and then dusted with bread crumbs and go in the oven ... delicious!!

Leek
Eliminate the hardest part of the leaves, clean and dry. So you can keep them long in the refrigerator sealed in plastic bags perforated slightly, to make me crazy once I used them for a harness filet of salmon baked and then steamed ....

Radicchio
closed in a plastic bag or wrapped in a dishcloth, can be stored in the refrigerator for a week, I love him to Treviso seasoned with balsamic vinegar of Modena ....

Spinach
is kept in the refrigerator for 2-3 days in sealed plastic bags, if already washed and dried. You can freeze already cooked and drained, although I prefer them raw seasoned with apples and walnuts or pine nuts and pomegranate.

Pumpkin
If preserved whole and in a cool, pumpkin will keep for months. Once cut, you can store in the refrigerator for up to one week, last week I made a compote with ginger and pumpkin ... I open the jar and tell you how
